One look at the above picture and it should be clear what I’m up to. It’s been a while since I last made macarons. I often find myself too lazy to whip up the filling after I’m done with the shells. Wonder if that’s normal.

These little babies are very sweet on their own, so flavours are essential to give them a nice balance. You usually won’t go wrong with dark chocolate ganache filling, but today I went with lemon buttercream. You’ll be surprised, though, that even when I have success with macarons, I once found myself paying $2.50 for a rose flavoured mac. Yes. It was prolly one of those just-for-the-heck-of-it moments.  

Yum.   I kinda like them better overnight.  Maybe because I like them cold.  Or maybe I should sandwich some ice cream.  All the faster to eat you with, my dear.  Anyhow, today’s filling is worth not getting lazy over, I like :)
